In partnership with Solano County participating restaurants, the Vallejo Chamber of Commerce and the Workforce Development Board of Solano County, Vallejo Regional Education Center is hosting a new Introduction to Commercial Culinary course.
Learn introductory basics of working in a commercial kitchen, taught by a fully-credentialed, experienced chef. Topics will include basic knife skills, kitchen layout, culinary equipment, operation safety, and sanitation.
No cost to enroll, spaces limited

Class schedule:
Four-week session - Starting June 20, 2022
Monday and Wednesday evenings from 5:30PM - 8:30PM
Week 1:
Monday June 20, Chef Allen introduction. Begin Food Handler’s card
process. Industry overview. Begin development of resume. Homework:
Get the online Food Handler’s course done.
Wednesday June 22, Finish online test for Food Handlers card. Review
teamwork in the kitchen.
Week 2:
Monday June 27: Kitchen on-site training. *NOTE THIS ON SITE AT
“PROVISIONS KITCHEN” AT 300 Virginia St., Vallejo, 94590. Kitchen
environment, equipment, safety, and use. How to sweep, mop, clean
sanitize, move, and speak in a commercial kitchen.
Wednesday June 29: Knife skills introduction including description,
claw, care, safety, code, etiquette. Kitchen dress, hygiene, and shoes.
Week 3:
TUESDAY July 5: (**note adjustment for Independence Day holiday).
Knife practice, safety, knife etiquette, descriptions, care, and grip.
Wednesday July 6: Knife skills, practice dice, julienne, slice, feather cut,
rough cut, brunoise.
Week 4:
Monday, July 11: Resume building. Intro to interviewing. How to
prepare for interview.
Wednesday, July 13: Come dressed and prepared to interview. Mock
interviewing. 7PM Job fair with industry/restaurant partners eager to hire.
